Ingredients

  • 1 1/2 c. yellow cornmeal
  • 1/2 c. all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1 egg
  • 1 small onion, chopped
  • oil for frying
  • 1 c. buttermilk
  • jalapeno pepper, finely chopped (if desired)

Method

  • In a large mixing bowl, stir together cornmeal, flour, baking powder, salt and baking soda.
  • In separate bowl, mix together egg, onion and buttermilk.
  • Stir into dry ingredients until blended. Add jalapenos (if desired).
  • Drop by rounded tablespoonfuls into hot deep fat (370°) and fry about 1 minute each side, or until golden, turning to brown both sides.
