Ingredients

  • 1 2/3 cups ricotta
  • 3 None large eggs, lightly beaten
  • 7 oz ham, finely diced
  • 4 None spring onions, finely chopped
  • 1/3 cup finely chopped fresh chives
  • 3/4 cup alll-purpose flour
  • 1 pinch baking oda
  • 1/3 cup olive oil
  • None None Tomato chutney or relish, to serve

Method

  • Lightly whisk ricotta and eggs in a bowl until smooth. Stir in ham, spring onions and chives. Stir in sifted flour and baking soda and season to taste.
  • In a skillet, heat oil on medium high. Shallow-fry spoonfuls of ricotta mixture in batches for 2-3 mins, until golden and cooked through. Drain on kitchen paper and serve with tomato chutney or relish.
