Ingredients
- 1 2/3 cups ricotta
- 3 None large eggs, lightly beaten
- 7 oz ham, finely diced
- 4 None spring onions, finely chopped
- 1/3 cup finely chopped fresh chives
- 3/4 cup alll-purpose flour
- 1 pinch baking oda
- 1/3 cup olive oil
- None None Tomato chutney or relish, to serve
Method
- Lightly whisk ricotta and eggs in a bowl until smooth. Stir in ham, spring onions and chives. Stir in sifted flour and baking soda and season to taste.
- In a skillet, heat oil on medium high. Shallow-fry spoonfuls of ricotta mixture in batches for 2-3 mins, until golden and cooked through. Drain on kitchen paper and serve with tomato chutney or relish.
