Ingredients

  • 6 corn tortillas
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 6 large eggs
  • 12 teaspoon salt
  • 14 teaspoon pepper
  • 34 cup refrigerated fresh salsa
  • 6 tablespoons light sour cream
  • 1 ripe avocado, sliced

Method

  • Heat tortillas and beans according to package directions.
  • Heat oil over medium high heat in large skillet; crack three eggs into skillet.
  • Cook 2-3 minutes or until desired doneness; repeat with remaining eggs.
  • Sprinkle eggs with salt and pepper.
  • Place one egg on each tortilla; top with beans, salsa, sour cream and avocado.
