Ingredients
- 1/4 cup butter plus extra for greasing
- 1/2 cup all purpose flour
- 1 1/2 cups milk
- 5 1/4 ounces dark chocolate melted
- 1 teaspoon vanilla extract
- 4 eggs separated
- 1/2 cup sugar
- powdered sugar to serve
- whipped cream to serve
Method
- Preheat oven to 400°F. Grease six 1-cup ramekins. Place on a baking sheet.
- Melt butter in a saucepan. Stir in flour and cook 1 minute. Remove from heat. Mix in milk. Return to heat, stirring, until sauce boils.
- Stir in chocolate and vanilla. Remove from heat and cool. Beat in egg yolks one at a time. Transfer to a large bowl. Cool.
- Using an electric mixer, beat egg whites in a large bowl until soft peaks form. Gradually add sugar, beating, until foam is thick and glossy. Fold into chocolate mixture. Spoon into prepared ramekins. Bake for 15-20 minutes, until risen. Dust with powdered sugar and serve with whipped cream.
