Ingredients

  • 1/4 cup butter plus extra for greasing
  • 1/2 cup all purpose flour
  • 1 1/2 cups milk
  • 5 1/4 ounces dark chocolate melted
  • 1 teaspoon vanilla extract
  • 4 eggs separated
  • 1/2 cup sugar
  • powdered sugar to serve
  • whipped cream to serve

Method

  • Preheat oven to 400°F. Grease six 1-cup ramekins. Place on a baking sheet.
  • Melt butter in a saucepan. Stir in flour and cook 1 minute. Remove from heat. Mix in milk. Return to heat, stirring, until sauce boils.
  • Stir in chocolate and vanilla. Remove from heat and cool. Beat in egg yolks one at a time. Transfer to a large bowl. Cool.
  • Using an electric mixer, beat egg whites in a large bowl until soft peaks form. Gradually add sugar, beating, until foam is thick and glossy. Fold into chocolate mixture. Spoon into prepared ramekins. Bake for 15-20 minutes, until risen. Dust with powdered sugar and serve with whipped cream.
