Ingredients

  • 4 slices bacon, fried crisp and drained
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 small can mushrooms
  • 2 cans white hominy, drained
  • 1 can Ro-Tel tomatoes
  • 1 tsp. Worcestershire sauce
  • 1/2 lb. Old English cheese, cut up (no substitute)
  • salt and pepper to taste

Method

  • Fry bacon in skillet; remove and drain.
  • Saute onion and green pepper in two tablespoons drippings.
  • Add mushrooms, hominy and remaining ingredients to skillet.
  • Simmer for a few minutes, until cheese is melted, stirring often.
  • Put mixture in baking dish and top with crumbled bacon.
  • Bake at 350° for at least 20 minutes, until bubbly.
