- 1 tablespoon cooking oil
- 12 medium onion, sliced
- 2 garlic cloves, chopped
- 1 large zucchini, cubed
- 1 (15 ounce) can pinto beans, drained
- 1 (15 ounce) can black beans, drained
- 1 (15 ounce) can hominy, drained
- 1 (4 ounce) canchopped green chilies
- 14 cup fresh cilantro, chopped
- 2 teaspoons chili powder
- 12 teaspoon ground cumin
- salsa verde, Diced tomato, and cilantro for garnish
Method
- In a large frying pan warm oil of medium heat.
- Add onion, garlic, zucchini, Chili powder, cumin, and pinch of salt.
- Cook until onion sweats.
- Add beans, hominy, green chillies, and cilantro and cook over medium heat until warm.
