Ingredients

  • 1 tablespoon cooking oil
  • 12 medium onion, sliced
  • 2 garlic cloves, chopped
  • 1 large zucchini, cubed
  • 1 (15 ounce) can pinto beans, drained
  • 1 (15 ounce) can black beans, drained
  • 1 (15 ounce) can hominy, drained
  • 1 (4 ounce) canchopped green chilies
  • 14 cup fresh cilantro, chopped
  • 2 teaspoons chili powder
  • 12 teaspoon ground cumin
  • salsa verde, Diced tomato, and cilantro for garnish

Method

  • In a large frying pan warm oil of medium heat.
  • Add onion, garlic, zucchini, Chili powder, cumin, and pinch of salt.
  • Cook until onion sweats.
  • Add beans, hominy, green chillies, and cilantro and cook over medium heat until warm.
