Ingredients

  • 3 (3 oz.) pkg. cherry flavored gelatin
  • 1 c. sugar
  • 2 c. boiling water
  • 1 (15 1/4 oz.) can crushed pineapple
  • 2 Tbsp. lemon juice
  • 2 c. fresh cranberries, ground
  • 2 small oranges, unpeeled, seeded and ground
  • 2 c. finely chopped celery
  • 1 c. chopped walnuts

Method

  • Dissolve gelatin and sugar in boiling water.
  • Drain pineapple, reserving juice.
  • Set pineapple aside.
  • Add water to pineapple juice to measure 1 cup.
  • Stir in lemon juice.
  • Stir juice mixture into gelatin mixture; chill until consistency of unbeaten egg white.
  • Add cranberries, oranges, celery and walnuts to gelatin mixture; mix well.
  • Pour into lightly oiled 10-cup mold.
  • Chill until set.
  • Yields 15 to 18 servings.
