Ingredients

  • 1 gallon green tomato
  • 1 cup water
  • 5 bell peppers
  • 5 anahiem hot peppers
  • 8 onions
  • 3 stalks celery
  • 1 head cabbage, large
  • 1/2 cup salt, kosher
  • 3 cups vinegar
  • 2 cups sugar
  • 2 teaspoons cinnamon
  • 2 teaspoons turmeric
  • 2 teaspoons allspice
  • 2 teaspoons dry mustard
  • 4 lemons, juice of

Method

  • grind all the vegetables.
  • put in a large kettle.
  • bring to a boil.
  • with the water,spices ,vinegar ,salt and sugar
  • cook down for one hour adding water as needed.
  • add lemon juice at very end.
  • pour into hot jars and seal.
