- 1 gallon green tomato
- 1 cup water
- 5 bell peppers
- 5 anahiem hot peppers
- 8 onions
- 3 stalks celery
- 1 head cabbage, large
- 1/2 cup salt, kosher
- 3 cups vinegar
- 2 cups sugar
- 2 teaspoons cinnamon
- 2 teaspoons turmeric
- 2 teaspoons allspice
- 2 teaspoons dry mustard
- 4 lemons, juice of
Method
- grind all the vegetables.
- put in a large kettle.
- bring to a boil.
- with the water,spices ,vinegar ,salt and sugar
- cook down for one hour adding water as needed.
- add lemon juice at very end.
- pour into hot jars and seal.
