Ingredients

  • 1 teaspoon instant chopped garlic
  • 1 teaspoon water
  • 2 tbsp. extra virgin olive oil
  • 1 chicken (3 lbs.) cut in eighths
  • 1 1/2 teaspoon Italian seasoning (crushed)
  • 1/2 teaspoon salt
  • 1/4 teaspoon grnd black pepper
  • 1/2 c. dry white wine
  • 2 tbsp. lemon juice
  • 2 tbsp. lemon peel cut in matchsticks, optional

Method

  • Combine water and garlic.
  • Let stand till softened, about 10 min.
  • In a large skillet heat oil till warm.
  • Add in chicken.
  • Brown on all sides, about 10 min.
  • Drain off all but 1 Tbsp.
  • of the drippings.
  • Add in garlic.
  • Saute/fry till golden brown, about 3 min.
  • Add in Italian seasonings, salt, black pepper, wine, and lemon juice.
  • Bring to boil, reduce heat and simmer, covered, till chicken is cooked through, about 30 min.
  • Remove chicken to a heated platter.
  • Simmer sauce, uncovered, till reduced to 1/2 c., about 3 min.
  • Pour over chicken.
  • Sprinkle with lemon peel if you like.
