- 1 teaspoon instant chopped garlic
- 1 teaspoon water
- 2 tbsp. extra virgin olive oil
- 1 chicken (3 lbs.) cut in eighths
- 1 1/2 teaspoon Italian seasoning (crushed)
- 1/2 teaspoon salt
- 1/4 teaspoon grnd black pepper
- 1/2 c. dry white wine
- 2 tbsp. lemon juice
- 2 tbsp. lemon peel cut in matchsticks, optional
Method
- Combine water and garlic.
- Let stand till softened, about 10 min.
- In a large skillet heat oil till warm.
- Add in chicken.
- Brown on all sides, about 10 min.
- Drain off all but 1 Tbsp.
- of the drippings.
- Add in garlic.
- Saute/fry till golden brown, about 3 min.
- Add in Italian seasonings, salt, black pepper, wine, and lemon juice.
- Bring to boil, reduce heat and simmer, covered, till chicken is cooked through, about 30 min.
- Remove chicken to a heated platter.
- Simmer sauce, uncovered, till reduced to 1/2 c., about 3 min.
- Pour over chicken.
- Sprinkle with lemon peel if you like.
