Ingredients

  • 1/2 lb. ground beef
  • 1/3 c. chopped onion
  • 1 (15 oz.) can tomato sauce
  • 1/2 tsp. salt
  • 1/2 tsp. oregano
  • 1/2 tsp. basil
  • 4 medium zucchini
  • 1 (8 oz.) carton cottage cheese
  • 1 egg
  • 2 Tbsp. flour
  • 1/4 lb. Mozzarella cheese, shredded

Method

  • Brown ground beef and onion in a skillet until crumbly; drain well.
  • Add tomato sauce, salt, oregano, basil and pepper.
  • Simmer for 5 minutes.
  • Slice zucchini lengthwise 1/4-inch thick.
  • Blend cottage cheese and egg in bowl.
  • Alternate layers of zucchini sprinkled with flour, cottage cheese mixture and sauce in a rectangular baking pan, 13 x 9 x 2-inch until all ingredients are used.
  • Top with Mozzarella cheese.
  • Bake at 375° for 40 minutes. Let stand for 10 minutes before cutting.
  • Makes 8 servings.
