- 1/2 lb. ground beef
- 1/3 c. chopped onion
- 1 (15 oz.) can tomato sauce
- 1/2 tsp. salt
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 4 medium zucchini
- 1 (8 oz.) carton cottage cheese
- 1 egg
- 2 Tbsp. flour
- 1/4 lb. Mozzarella cheese, shredded
Method
- Brown ground beef and onion in a skillet until crumbly; drain well.
- Add tomato sauce, salt, oregano, basil and pepper.
- Simmer for 5 minutes.
- Slice zucchini lengthwise 1/4-inch thick.
- Blend cottage cheese and egg in bowl.
- Alternate layers of zucchini sprinkled with flour, cottage cheese mixture and sauce in a rectangular baking pan, 13 x 9 x 2-inch until all ingredients are used.
- Top with Mozzarella cheese.
- Bake at 375° for 40 minutes. Let stand for 10 minutes before cutting.
- Makes 8 servings.
