Ingredients

  • 3 c. cubed rye bread
  • 1 c. water
  • 3 eggs
  • 1 lb. corned beef, sliced and chopped
  • 1 tsp. caraway seed
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 8 oz. shredded Swiss cheese
  • 16 oz. sauerkraut, well drained
  • 1 c. Thousand Island or Russian dressing

Method

  • In a large bowl, mix together bread, water, eggs, corned beef, caraway seed, salt and pepper.
  • Place half of the mixture in a large shallow casserole dish that has been sprayed with nonstick spray coating.
  • Spread evenly over bottom. Spread sauerkraut over mixture.
  • Spread dressing over the sauerkraut.
  • Spread with remaining corned beef mixture and sprinkle with Swiss cheese. Bake at 350° for 35 to 45 minutes or until golden brown and set. Serves 6 to 8.
