Ingredients
- 2 pkg. frozen, chopped spinach, thawed
- 3 or 4 eggs, beaten
- 1 qt. buttermilk
- 1 stick oleo or butter
- 1 lb. cottage cheese
- salt to taste
- 2 c. corn meal
Method
- Cook spinach in pan with no water over low heat.
- Drain.
- Add cottage cheese, eggs and 2 tablespoons butter. Add salt to taste and mix thoroughly.
