Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups whole wheat flour
  • 3/4 cup finely chopped hazelnuts
  • 2/3 cup packed brown sugar
  • 1 Tbsp. Magic Baking Powder
  • 1/2 tsp. salt
  • 1 3/4 cups milk
  • 1 egg
  • 1/3 cup butter or margarine, melted
  • TOPPING:
  • 1/4 cup finely chopped hazelnuts
  • 2 Tbsp. brown sugar
  • 1 tsp. cinnamon

Method

  • GREASE 12 large muffin tins or line with paper baking cups.
  • MIX flours, chopped hazelnuts, brown sugar, baking powder and salt in large bowl.
  • WHISK together milk, egg and butter.
  • MIX hazelnuts, brown sugar and cinnamon for topping.
  • STIR liquid mixture into dry ingredients, stirring just until moistened.
  • Spoon into muffin cups, filling each to the top.
  • Sprinkle topping mixture over each, pressing lightly into batter.
  • BAKE at 400F (200C) for about 20 minutes or until firm to the touch.
  • Cool in pan 5 minutes; remove muffins and cool on rack.
  • Store in airtight container.
