- 1 1/2 cups all-purpose flour
- 1 1/2 cups whole wheat flour
- 3/4 cup finely chopped hazelnuts
- 2/3 cup packed brown sugar
- 1 Tbsp. Magic Baking Powder
- 1/2 tsp. salt
- 1 3/4 cups milk
- 1 egg
- 1/3 cup butter or margarine, melted
- TOPPING:
- 1/4 cup finely chopped hazelnuts
- 2 Tbsp. brown sugar
- 1 tsp. cinnamon
Method
- GREASE 12 large muffin tins or line with paper baking cups.
- MIX flours, chopped hazelnuts, brown sugar, baking powder and salt in large bowl.
- WHISK together milk, egg and butter.
- MIX hazelnuts, brown sugar and cinnamon for topping.
- STIR liquid mixture into dry ingredients, stirring just until moistened.
- Spoon into muffin cups, filling each to the top.
- Sprinkle topping mixture over each, pressing lightly into batter.
- BAKE at 400F (200C) for about 20 minutes or until firm to the touch.
- Cool in pan 5 minutes; remove muffins and cool on rack.
- Store in airtight container.
