Ingredients

  • 3 c. milk
  • 2 c. freshly grated coconut
  • 3 cloves garlic, chopped finely
  • 1 Tbsp. fresh ginger root, chopped finely
  • 2 apples, cored and sliced
  • 2 medium onions, chopped medium
  • 2 Tbsp. curry powder
  • 1/2 c. butter, softened
  • 1/2 c. enriched flour
  • 1/2 tsp. salt
  • 1/2 c. heavy cream
  • 2-3 c. cooked meat of choice - chicken, shrimp, or other meat and cut into bite-sized pieces

Method

  • Add milk to the grated coconut and bring mixture to a simmering temperature.
  • Add garlic, ginger, apples and onions to mixture.
  • Blend curry powder with 2 tablespoons of butter.
  • Add curry powder and butter mixture to the coconut mixture and cook slowly for three hours, stirring occasionally.
  • Remove mixture from heat and let stand in a cool place for several hours or until the next day.
