Ingredients

  • 1 1/2 pounds ground beef
  • 1 red onion large, finely chopped
  • 2 cloves garlic finely chopped
  • 4 ounces tomato puree
  • 2 tablespoons taco seasoning mix
  • 1/2 teaspoon chili powder optional
  • 14 ounces red kidney beans drained, rinsed
  • 1 ounce breadcrumbs
  • 1 large egg beaten lightly
  • 1 avocado medium ripe
  • 2 teaspoons lime juice
  • 4 ounces tortilla chips
  • 2 ounces cheddar cheese grated

Method

  • Preheat oven to 400°F. Line a shallow roasting pan with parchment paper. Line base of a loaf pan with parchment paper, extending paper 2 inch above long sides.
  • For the meatloaf mixture, place beef, onion, garlic, tomato puree, seasoning, chili powder, if using, beans, breadcrumbs and egg in a large bowl. Using your hands, mix thoroughly to combine. Press firmly into the prepared loaf pan. Turn meatloaf out into the prepared roasting pan and discard paper. Bake 45 mins, or until cooked through.
  • Meanwhile, for the guacamole, mash avocado with lime juice in a bowl with a fork. Season well with salt and freshly ground black pepper.
  • Slice meatloaf and sprinkle with cheese. Serve with guacamole and tortilla chips.
