Ingredients

  • 3 c. all-purpose flour
  • 3/4 tsp. salt
  • 1 tsp. baking soda
  • 2 c. sugar
  • 1 tsp. ground cinnamon
  • 1 c. chopped nuts
  • 3 eggs, beaten
  • 1 c. vegetable oil
  • 2 c. mashed bananas (about 4 large)
  • 1 (8 oz.) can crushed pineapple, drained
  • 2 tsp. vanilla extract

Method

  • Combine first 5 ingredients.
  • Combine remaining ingredients and add to flour mixture, stirring until just moistened.
  • Spoon batter into two greased and floured loaf pans.
  • Bake at 350° for 1 hour and 10 minutes or until wooden pick comes out clean.
  • Cool in pans 10 minutes, remove from pan and cool on racks.
  • Yields 2 loaves.
  • Freezes well.
