Ingredients

  • 2 eggs-beat well
  • 1/2 c sugar
  • 1/4 t salt
  • 1 c flour
  • 2 c milk
  • (Add 1/2 of the milk and then stir the mixture until it's smooth. DO NOT OVERBEAT! Add the rest of the milk.)

Method

  • Heat griddle, butter surface add about 1/3 c of batter. Cook til top bubbles; turn with knife spatula.
  • Serve with lingonberries, strawberries, or syrup.
  • Lingonberries:
  • 1 pint lingonberries
  • 1 c water
  • 2 c sugar
  • stick of cinnamon
  • Boil for 20-45 minutes. Makes a heavy syrup.
