Ingredients
- 2 eggs-beat well
- 1/2 c sugar
- 1/4 t salt
- 1 c flour
- 2 c milk
- (Add 1/2 of the milk and then stir the mixture until it's smooth. DO NOT OVERBEAT! Add the rest of the milk.)
Method
- Heat griddle, butter surface add about 1/3 c of batter. Cook til top bubbles; turn with knife spatula.
- Serve with lingonberries, strawberries, or syrup.
- Lingonberries:
- 1 pint lingonberries
- 1 c water
- 2 c sugar
- stick of cinnamon
- Boil for 20-45 minutes. Makes a heavy syrup.
