Ingredients

  • 1 Quart coconut milk
  • 1/2 Cup sugar
  • 1 Pinch salt
  • 1/3 Cup shredded coconut
  • 1/4 Cup water
  • 1/4 Cup cornstarch

Method

  • In a saucepan stir together over medium heat coconut milk, sugar, and salt until granules are dissolved. Reduce heat to medium-low and add the shredded coconut to the saucepan to soften for about five minutes. Make a slurry with water and cornstarch and add to saucepan. Reduce until it reaches a yogurt consistency. Place in container to chill, usually takes about an hour and a half. Haupia can be chilled in formed containers for presentation.
