Ingredients

  • 58 Nilla wafters (finely crushed)
  • 1/2 cup powdered sugar
  • 1/2 cup chopped walnuts
  • 1/4 cup boiling water
  • 2 teaspoons instant coffee
  • 2 tablespoons butter
  • 1 tablespoon corn syrup
  • 36 cherries with stems
  • 1-1/2 package semi-sweet backing chocolate (melted)

Method

  • Mix crumbs, sugar and walnuts, set aside.
  • Add boiling water to coffee in small bowl, stir until coffee is dissolved. Add butter and corn syrup, stir until well blended.
  • Add crumbs to mixture, mix well.
  • Shape about 1 rounded teaspoon full of the crumb mixture around each cherry, leaving stem of cherry uncoated. Place in shallow pan; cover and refrigerate 1 hour.
  • Dip cherries in chocolate until completely covered. Place back in shallow pan and refrigerate 30 minutes. Store in fridge.
