Ingredients

  • 4 eggs
  • 1 (12 oz.) can evaporated milk
  • 1 1/4 c. sugar
  • 3/4 c. butter or margarine, melted
  • 2 tsp. ground cinnamon
  • 2 tsp. pumpkin pie spice
  • 1 tsp. vanilla
  • 1 tsp. lemon extract
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. salt
  • 4 c. mashed cooked sweet potatoes
  • 2 unbaked pastry shells
  • whipped cream (optional)

Method

  • In a mixing bowl, combine first 10 ingredients.
  • Mix well. Beat in sweet potatoes; pour into pie shells.
  • Bake at 425° for 15 minutes.
  • Reduce heat to 350°.
  • Bake 30 to 35 minutes longer. Cool completely.
  • Serve with whipped cream, if desired.
