Ingredients

  • 8 lg. red skinned potatoes
  • 8 tbsp. butter
  • 1 egg, beaten
  • Salt and pepper, to taste
  • 2/3 c. lowfat milk
  • 1/2 c. Parmesan cheese
  • 1/2 pound boiled or possibly baked ham, sliced
  • 1 pound shredded Mozzarella cheese
  • Bread crumbs

Method

  • Boil potatoes with skins on till tender, drain and peel while warm.
  • Mash through potato ricer into large bowl.
  • Add in butter, egg, salt, pepper, lowfat milk and Parmesan cheese.
  • Blend at medium with electric mixer till they become the consistency of mashed potatoes.
  • Spread potato layer in lightly greased 2 qt deep casserole dish.
  • Layer with part of ham and cheese.
  • Repeat the process ending with potato layer on top.
  • Dot with butter.
  • Sprinkle with bread crumbs.
  • Bake at 350 degrees for 30 min.
  • Serves 6.
