Ingredients

  • 4 lb. rabbit, cut up
  • 1/4 c. flour
  • pepper, salt and parsley
  • 1 c. white onion, chopped
  • 2 cloves garlic, sliced
  • 1 1/2 Tbsp. olive oil (butter)
  • 1 qt. boiling water
  • 1 c. rice
  • 1 tsp. seasoned salt
  • 1 tsp. paprika
  • 1 c. sour cream

Method

  • Shake rabbit pieces, several at a time, in paper or plastic bag with flour, pepper, salt and parsley.
  • Saute onion and garlic in olive oil or butter in heavy frypan until soft.
  • Then, piling the onions and garlic to one side, brown the rabbit.
  • Pour in boiling water to cover; add rice, seasoned salt and paprika. Cover tightly and simmer for 20 minutes.
