Ingredients

  • squash or zucchini
  • vegetable oil
  • cornmeal
  • salt
  • pepper

Method

  • Wash and cut off ends of squash or zucchini; slice lengthwise, making slices about 1/8-inch thick.
  • Rub lightly with vegetable oil.
  • Roll in cornmeal (this will be a light coating).
  • Place on a hot grill; sprinkle with salt and pepper.
  • Also use other seasonings, if desired.
  • Cook until soft to the touch.
  • The amount you prepare will depend on size of squash and number of people being served.
