Ingredients
- 1 Onion, Chopped
- 1 Potato, diced
- 6 sm. Zucchini, sliced
- 2 sm. or 1 lg. Tomato, diced
- 1/2 lb. Cheddar Cheese, shredded
Method
- Saute the onion and potato in butter or bacon drippings until tender.
- Add zucchini and cook until tender, but not mushy.
- Add the tomato and heat through.
- Sprinkle with the cheese and heat until the cheese melts and coats the vegetables.
