Ingredients

  • 1 1/2 lb. fresh sea scallops
  • 4 (3 to 4 oz. each) freshly ground sausage links
  • 1 large yellow onion, cut into cubes
  • 1 large red bell pepper, seeded and cut into 12 large sq.
  • 1 large green pepper, seeded and cut into 12 large sq.
  • salt and freshly cracked black pepper to taste
  • 4 Tbsp. freshly chopped basil
  • 1 tsp. minced garlic
  • 2 Tbsp. extra virgin olive oil
  • 3 Tbsp. lemon juice (about 2 lemons worth)
  • 2 Tbsp. balsamic vinegar

Method

  • Blanch the scallops in boiling, salted water for 1 minute. Drain and allow to cool.
  • Cook the sausage in boiling water until completely cooked, about 5 minutes.
  • Drain and allow to cool. Thread the scallops, sausages and vegetables on skewers and season with salt and pepper.
  • Cook the skewers over a medium fire until all the ingredients have attained some brown crusting, about 3 to 4 minutes.
  • Slide the ingredients off skewers into a large bowl.
  • Add basil, garlic, oil, lemon juice and balsamic vinegar.
  • Shake the bowl until everything is well mixed.
