Ingredients

  • 4 (10 oz.) lobster tails
  • 1/2 c. butter
  • 1 clove garlic, minced
  • 3 Tbsp. lemon juice
  • 1 tsp. parsley, minced
  • salt and pepper to taste
  • 1 Tbsp. chives, chopped
  • lemon wedges

Method

  • Preheat
  • grill.
  • Cut
  • lobster
  • along
  • edges
  • of
  • tail undershells with scissors.
  • Clip
  • off
  • fins
  • on
  • outer
  • edges. Peel back and discard
  • soft
  • undershell.
  • Bend tail backwards, cracking joints to prevent
  • curling.
  • In saucepan mix together butter, garlic, lemon juice, parsley, salt, pepper and chives; saute for 1 to 2
  • minutes.
  • Brush
  • lobster
  • tails
  • with butter mixture.
  • Grease rack and
  • place lobsters, shell side down, on hot grill.
  • Cover tail with foil and grill for 5 to 7 minutes. Brush again with butter
  • sauce
  • and
  • turn
  • lobster.
  • Cover and cook an additional 3 to 5 minutes, until lobster turns opaque. Serve with remaining sauce.
  • Garnish
  • with
  • lemon
  • wedges
  • and serve with drawn butter, if desired.
  • Makes 4 servings.
