Ingredients

  • 4 cups Dr. Fuhrman's VegiZest broth
  • 2 16-ounce cans navy beans
  • 1 16-ounce can diced tomatoes, no salt added
  • 1 green apple, peeled and chopped
  • 1/4 cup onion, finely chopped
  • 1/4 cup carrot, chopped
  • 1/4 cup celery, chopped
  • 1/4 cup green pepper, chopped
  • 1 tablespoon fresh parsley, chopped
  • 2 teaspoons lemon juice
  • 1 teaspoon curry powder
  • 1/8 teaspoon cloves
  • tabasco sauce, to taste
  • ground pepper, to taste

Method

  • In a large saucepan combine broth, beans, undrained tomatoes, apple, onion, carrot, celery, green pepper, parsley, lemon juice, curry powder, cloves, tabasco and pepper. Bring to a boil, then reduce heat. Cover. Simmer for 20 minutes, stirring occasionally.
