- 4 cups Dr. Fuhrman's VegiZest broth
- 2 16-ounce cans navy beans
- 1 16-ounce can diced tomatoes, no salt added
- 1 green apple, peeled and chopped
- 1/4 cup onion, finely chopped
- 1/4 cup carrot, chopped
- 1/4 cup celery, chopped
- 1/4 cup green pepper, chopped
- 1 tablespoon fresh parsley, chopped
- 2 teaspoons lemon juice
- 1 teaspoon curry powder
- 1/8 teaspoon cloves
- tabasco sauce, to taste
- ground pepper, to taste
Method
- In a large saucepan combine broth, beans, undrained tomatoes, apple, onion, carrot, celery, green pepper, parsley, lemon juice, curry powder, cloves, tabasco and pepper. Bring to a boil, then reduce heat. Cover. Simmer for 20 minutes, stirring occasionally.
