Ingredients

  • FOR THE SALAD:
  • 3/4 cups Quinoa
  • 1-1/4 cup Water, Plus More To Soak Quinoa
  • 1/4 teaspoons Salt, Plus More To Season Salad
  • 4 whole Small Cucumbers, Large Diced
  • 1-1/2 cup Grape Tomatoes, Halved
  • 1 whole Yellow Pepper, Diced
  • 1 whole Green Pepper, Diced
  • 3/4 cups Feta Cheese, Crumbled
  • Pepper To Taste
  • FOR THE DRESSING:
  • 1/3 cups Olive Oil
  • 3 Tablespoons Red Wine Vinegar
  • 1 sprig Oregano, Chopped
  • Salt And Pepper, to taste

Method

  • Soak quinoa in some water for 5 minutes. Drain and rinse. Add quinoa with the water and salt to a small saucepan cover and bring to a boil; reduce heat and simmer for 15 minutes. Let rest for 5 minutes. Fluff with a fork and let cool.
  • Meanwhile, mix vegetables together. Shake dressing ingredients in a jar. Mix quinoa with the vegetables and add crumbled feta, additional salt and pepper to taste. Be careful, as feta is salty. Pour dressing over the salad and toss. Adjust seasoning.
  • Refrigerate for 1-2 hours and serve.
