Ingredients
- 1 c. boiling water
- 1/2 c. grapefruit juice
- 1 Tbsp. vinegar
- 1 large grapefruit, peeled and diced (1 c.)
- 1 (3 oz.) pkg. lime flavored gelatin
- 1/2 c. mayonnaise or salad dressing
- 1/2 c. chopped celery
Method
- Dissolve gelatin in boiling water.
- Add grapefruit juice, vinegar and mayonnaise.
- With rotary or electric beater, mix until well blended.
- Pour into 4-cup refrigerator tray.
- Chill until partially set.
- Turn mixture into bowl and beat until fluffy. Fold in grapefruit and celery. Return to tray. Chill 5 to 6 hours or overnight.
- Serve on lettuce leaves.
- If desired, top each serving with a grapefruit section.
- Makes 5 servings.
