Ingredients

  • 1 c. boiling water
  • 1/2 c. grapefruit juice
  • 1 Tbsp. vinegar
  • 1 large grapefruit, peeled and diced (1 c.)
  • 1 (3 oz.) pkg. lime flavored gelatin
  • 1/2 c. mayonnaise or salad dressing
  • 1/2 c. chopped celery

Method

  • Dissolve gelatin in boiling water.
  • Add grapefruit juice, vinegar and mayonnaise.
  • With rotary or electric beater, mix until well blended.
  • Pour into 4-cup refrigerator tray.
  • Chill until partially set.
  • Turn mixture into bowl and beat until fluffy. Fold in grapefruit and celery. Return to tray. Chill 5 to 6 hours or overnight.
  • Serve on lettuce leaves.
  • If desired, top each serving with a grapefruit section.
  • Makes 5 servings.
