Ingredients

  • 1 c. brown sugar
  • 1 c. lard
  • 3/4 c. dark molasses
  • 1/4 c. dark syrup
  • 1 tbsp. soda
  • 2 Large eggs
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1/2 teaspoon salt
  • 1/2 teaspoon ginger
  • 3 1/2 to 4 c. flour

Method

  • Lard makes a more elastic dough and better texture, but with some experimentation with flour amount, shortening could be substituted.
  • Heat sugar, lard, molasses, syrup in large saucepan.
  • Bring to rolling boil.
  • Add in soda.
  • (this may cause mix to foam, so make sure pan is large sufficient.)
  • Cold mix, stirring occasionally.
  • When cold, put in mixing bowl and add in Large eggs.
  • Sift together dry ingredients with only 2 c. of the flour.
  • Add in to wet mix, then add in remaining flour.
  • Chill before rolling to make sure it is cold.
  • Roll out dough on floured board and cut into favorite cookie shapes.
  • Bake at 350 degrees.
  • When done, remove from sheet and frost with simple powdered sugar frosting while still hot.
