Ingredients

  • 2 pounds ground beef
  • 2 pounds ground pork
  • 1 pound chicken giblets (no livers) ground
  • 1/2 pound butter
  • 1 large onions diced
  • 1 cup scallions, spring or green onions diced
  • 1 medium green bell peppers diced
  • 2 cups celery diced
  • 2 x bay leaves remove after 2 hours
  • 1/2 cup parsley leaves chopped
  • 6 cloves garlic minced or crushed
  • 1 tablespoon kosher salt
  • 1/2 tablespoon black pepper
  • 18 cup worcestershire sauce
  • 1 cup heavy whipping cream
  • 8 cups rice pre-cooked

Method

  • Combine all ingredients except cream and rice in a pot, cover and simmer for four hours, stirring occasionally.
  • After four hours add the heavy cream and simmer for 30 minutes.
  • Add the pre-cooked rice and simmer 30 more minutes.
  • (Note: The amount of rice you use is purely subjective.
  • If you want to make the dish stretch farther use more rice.)
  • For best flavor results allow the finished dish to refrigerate over night and serve the next day after reheating for about an hour.
