Ingredients
- 1 lb. carrots, peeled
- 1 lemon
- 1 oz. butter or margarine
- 1 Tbsp. sugar
- 1 garlic clove, crushed
- salt and pepper
- dill or parsley sprigs
- shredded lemon rind
Method
- Cut carrots into thin rounds and finely pare lemon rind. Place carrots in a wide saucepan with pared lemon rind, butter, sugar, garlic and seasonings. Add sufficient cold water to just cover.
- Bring to a boil and cook over moderate heat for about 12 minutes until carrots are tender and liquid has evaporated, shaking pan occasionally to prevent sticking.
- Serve garnished with dill and lemon rind.
