Ingredients

  • 1 lb. carrots, peeled
  • 1 lemon
  • 1 oz. butter or margarine
  • 1 Tbsp. sugar
  • 1 garlic clove, crushed
  • salt and pepper
  • dill or parsley sprigs
  • shredded lemon rind

Method

  • Cut carrots into thin rounds and finely pare lemon rind. Place carrots in a wide saucepan with pared lemon rind, butter, sugar, garlic and seasonings. Add sufficient cold water to just cover.
  • Bring to a boil and cook over moderate heat for about 12 minutes until carrots are tender and liquid has evaporated, shaking pan occasionally to prevent sticking.
  • Serve garnished with dill and lemon rind.
