Ingredients

  • 2 red peppers diced 1/4 inch
  • 2 yellow peppers diced 1/4 inch
  • 2 green peppers diced 1/4 inch
  • 2 cups celery diced 1/4 inch
  • 1 large red onion sliced and spread into rings
  • 2 garlic minced
  • 1 tbsp salt
  • 1 tsp pepper
  • olive oil to cover bottom of large fry pan
  • 1/2 cup white wine
  • 2 250 g containers of 4 cheese pasta
  • multi coloured tortellini or rigatoni
  • 3 tbsp grated mparmesan
  • salt and pepper to taste

Method

  • Cook peppers, celery, onionrings, and garlic over hot heat for 10 minutes. Add salt, pepper and wine, cook on moderate for 10 minutes. Add 2 containers of 4 cheese pasta, and one container of water. Mix thoroughly, Bring to boil, reduce heat to simmer and cook covered 10 minutes.
  • When pasta is cooked, stir in sauce, and add parmesan and salt and pepper to taste
