Ingredients
- 8 inches long zucchini
- 12 inch piece gingerroot, peeled and minced
- 1 slice sweet onion, quartered
- 14 fresh lime
- pat unsalted butter
- salt and pepper
Method
- Slice zucchini very thinly and cook for 5 minutes in boiling, salted water.
- While zucchini is cooking, melt butter in frying pan and add onion and ginger once bubbles have subsided.
- Cook over medium low heat until onion is wilted and just about to turn golden.
- Add drained zucchini to frying pan and saute over medium heat for 2 minutes.
- Remove pan from heat.
- Squeeze juice of lime piece over zucchini, lightly salt and pepper, and toss ingredients in pan to mix.
- Serve immediately.
