Ingredients

  • 8 inches long zucchini
  • 12 inch piece gingerroot, peeled and minced
  • 1 slice sweet onion, quartered
  • 14 fresh lime
  • pat unsalted butter
  • salt and pepper

Method

  • Slice zucchini very thinly and cook for 5 minutes in boiling, salted water.
  • While zucchini is cooking, melt butter in frying pan and add onion and ginger once bubbles have subsided.
  • Cook over medium low heat until onion is wilted and just about to turn golden.
  • Add drained zucchini to frying pan and saute over medium heat for 2 minutes.
  • Remove pan from heat.
  • Squeeze juice of lime piece over zucchini, lightly salt and pepper, and toss ingredients in pan to mix.
  • Serve immediately.
