Ingredients

  • 2¼ cups plain flour
  • 2 teaspoons bicarbonate of soda
  • 1 teaspoon ground ginger
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 125 g butter, softened
  • ⅓ cup sugar
  • ⅓ cup treacle
  • ⅓ cup golden syrup
  • 1 egg
  • ½ cup milk
  • 1½ teaspoons cider vinegar
  • walnut pieces or peanut halves

Method

1. Stir flour with bicarbonate of soda, spices and salt into a mixing bowl. Beat butter and sugar in a bowl with an electric mixer until light and fluffy. Beat in treacle, golden syrup and egg.

2. Add dry ingredients, alternately with milk combined with vinegar, stirring well each time.

3. Drop level tablespoonfuls of mixture onto greased baking trays, allow room for spreading. Top each with a walnut piece or half a peanut.

4. Bake at 200°C for about 8 minutes, or until centres spring back when lightly pressed. Cool on trays 2–3 minutes. Transfer to a wire rack.

5. Store in an airtight container.
