Ingredients
- 10 medium potatoes, boiled with skins
- 8 slices bacon
- 2 medium onions, diced
- 3/4 c. sugar
- 2 tsp. dry mustard
- 2 eggs, beaten
- 3/4 c. vinegar
- salt to taste
- 4 hard-boiled eggs, sliced
Method
- Peel and cube potatoes and put in casserole or heavy bowl.
- Fry bacon.
- Remove and pat grease dry.
- Fry onions in bacon grease until tender, but not brown.
- Mix sugar and mustard together.
- Add to onions in frypan.
- Add beaten eggs and vinegar to onion mixture and cook until thickened, stirring constantly.
- Pour over potatoes and salt and pepper to taste.
- Add bacon and egg slices and mix. Heat in 350° oven for 30 minutes or until ready to serve.
