Ingredients

  • 10 medium potatoes, boiled with skins
  • 8 slices bacon
  • 2 medium onions, diced
  • 3/4 c. sugar
  • 2 tsp. dry mustard
  • 2 eggs, beaten
  • 3/4 c. vinegar
  • salt to taste
  • 4 hard-boiled eggs, sliced

Method

  • Peel and cube potatoes and put in casserole or heavy bowl.
  • Fry bacon.
  • Remove and pat grease dry.
  • Fry onions in bacon grease until tender, but not brown.
  • Mix sugar and mustard together.
  • Add to onions in frypan.
  • Add beaten eggs and vinegar to onion mixture and cook until thickened, stirring constantly.
  • Pour over potatoes and salt and pepper to taste.
  • Add bacon and egg slices and mix. Heat in 350° oven for 30 minutes or until ready to serve.
