Ingredients

  • 1 chicken, cut in pieces
  • 2 Tbsp. olive oil
  • 1 c. chopped onion
  • 2 Tbsp. tomato paste or small can tomato sauce
  • 1/2 c. chopped green pepper
  • 2 cloves garlic
  • 2 bay leaves
  • 2 c. rice
  • 1 Tbsp. salt
  • 3 1/2 c. chicken consomme or water
  • 1 pkg. frozen peas (precooked)
  • 1 small can pimento

Method

  • In heavy skillet or large electric skillet, heat oil and brown chicken.
  • Add onion, pepper and spices, etc.
  • (except rice).
  • Stir and cook 15 minutes.
  • Add rice, salt and consomme or water.
  • Bring quickly to boil, reduce heat, cover and simmer until done (about 15 minutes), then add peas and pimento.
