Ingredients

  • 1 bar German sweet chocolate
  • 2 3/4 c. Swans Down cake flour
  • 1 3/4 c. sugar
  • 3/4 tsp. cream of tartar
  • 1/2 tsp. soda
  • 1/4 tsp. cinnamon
  • 1 c. softened butter or margarine
  • 3/4 c. milk
  • 1 tsp. vanilla
  • 3 whole eggs and 1 egg yolk

Method

  • Melt chocolate and cool (microwave or double boiler). Sift together dry ingredients. Stir softened butter. Add dry ingredients, milk and vanilla. Mix to dampen flour. Beat 2 minutes at medium speed by mixer or 300 vigorous strokes by hand. Add eggs, yolk and chocolate. Beat 1 minute. Pour into greased and floured pan. Bake at 350° about 65 minutes. Cool and glaze.
