Ingredients

  • 1/4 c. minced green onions
  • 1 c. thinly chopped cucumbers
  • 1 minced clove garlic
  • 1/2 c. chopped green pepper (optional)
  • 1 large can tomato juice
  • 2 Tbsp. red wine vinegar
  • dash of Tabasco or to taste or dash of cayenne pepper
  • salt and pepper to taste

Method

  • Put veggies in food processor or blender and blend to desired chunkiness, not too fine.
  • Add juice, Tabasco and vinegar and mix. (I just pour veggies into pitcher/container and add liquid.) Chill very well.
  • Serves about 8.
