- 1/2 tablespoon cumin
- 1-2 tablespoons minced garlic
- 1 tablespoon tumeric
- 1 teaspoon minced ginger
- 1/2 cinammon stick
- 1 chopped onion
- 1/2 cup chopped red pepper
- 1/2 cup shredded carrots
- 1 1/2 cups chopped tomatoes
- 1 cup coconut milk
- 1 cup lentils, green or red
- 3 cups pork stock (you may use chicken but I made my own stock)
Method
- Saute onion, garlic, ginger, carrot, pepper, and all spices in 2 tablespoons of oil, stirring until fragrant, about five minutes.
- Add the tomatoes, lentils, stock, and coconut milk.
- Bring to a simmer and cook until lentils are done, about 45 minutes.
- When adding lentils and liquid, you may add protein if desired.
- I added to this batch the pork from the bones I used to make the stock.
- Done!
- Serve with naan bread, if desired.
