Ingredients

  • 1/2 tablespoon cumin
  • 1-2 tablespoons minced garlic
  • 1 tablespoon tumeric
  • 1 teaspoon minced ginger
  • 1/2 cinammon stick
  • 1 chopped onion
  • 1/2 cup chopped red pepper
  • 1/2 cup shredded carrots
  • 1 1/2 cups chopped tomatoes
  • 1 cup coconut milk
  • 1 cup lentils, green or red
  • 3 cups pork stock (you may use chicken but I made my own stock)

Method

  • Saute onion, garlic, ginger, carrot, pepper, and all spices in 2 tablespoons of oil, stirring until fragrant, about five minutes.
  • Add the tomatoes, lentils, stock, and coconut milk.
  • Bring to a simmer and cook until lentils are done, about 45 minutes.
  • When adding lentils and liquid, you may add protein if desired.
  • I added to this batch the pork from the bones I used to make the stock.
  • Done!
  • Serve with naan bread, if desired.
