- 1/4 cup olive oil
- 2 Tbsp. lemon juice
- 1/2 tsp. each: salt and ground black pepper
- 1 large clove garlic, minced
- 4 cups pita bread pieces (3/4 inch)
- 1 cup chopped cucumbers
- 1 medium tomato, chopped
- 1/2 cup chopped red peppers
- 1 pkg. (4 oz.) ATHENOS Traditional Crumbled Feta Cheese
- 1 Tbsp. thinly sliced fresh basil
Method
- Beat olive oil, lemon juice, salt, black pepper and garlic in large bowl with wire whisk until well blended.
- Add remaining ingredients just before serving; toss lightly.
