Ingredients
- 3 eggs
- 1 c. sugar
- 1 heaping Tbsp. flour
- juice of 2 lemons
- 3/4 c. pineapple or apricot juice
Method
- Beat eggs.
- Mix sugar and flour and add to eggs.
- Stir in lemon juice and pineapple or apricot juice.
- Mix well.
- Place mixture in double boiler and stir often until thick.
- Cool; refrigerate.
- Keeps 3 to 4 weeks.
- Mix with thawed whipped topping and serve over salad or mix with fruit salad.
