Ingredients

  • 1 c. flour
  • 1 tsp. soda
  • 1 c. sugar
  • 1/2 tsp. salt
  • 1 egg, well beaten
  • 1 (1 lb.) can fruit cocktail, drained
  • 2 1/2 Tbsp. liquid from fruit cocktail
  • 1 tsp. vanilla

Method

  • Stir first 4 ingredients together.
  • Add well beaten egg, fruit cocktail (drained), 2 1/2 tablespoons of liquid from fruit cocktail and vanilla.
  • Stir lightly.
  • Pour into lightly greased 8 x 8-inch pan.
  • Over top, spread crumbled 1/2 cup brown sugar and 1/2 cup chopped nuts (optional).
  • Bake at 350° for 45 to 50 minutes.
  • May be served with whipped cream, ice cream or lemon sauce.
