Ingredients

  • 4 cups fruit, of choice prepared as necessary (peeled, cored, etc.)
  • 1 12 cups sugar
  • 2 teaspoons cinnamon or 2 teaspoons nutmeg, if desired
  • 4 cups baking mix, reserve 1 cup
  • 2 cups milk
  • 2 eggs
  • 3 tablespoons shortening, melted
  • 3 tablespoons dark brown sugar
  • 2 tablespoons butter or 2 tablespoons margarine

Method

  • Prepare fruit as necessary and set aside.
  • Grease well a deep disposable aluminum baking dish (10" - 13" x 8").
  • Preheat oven to 400F.
  • Mix fruit lightly with 1 1/2 cups sugar and spice.
  • Pour into prepared baking dish.
  • Mix 3 cups of boxed baking mix with milk, eggs, and shortening.
  • Pour over top of fruit.
  • Sprinkle reserved 1 cup of baking mix over the mix in the baking dish.
  • Sprinkle brown sugar over all, then dot with butter.
  • Bake at 400F for 15 minutes, reduce heat to 350F and bake another 20 minutes or until fruit is tender and dough is firm.
