Ingredients

  • 2/3 c. Grape-Nuts cereal
  • 2 lrg apples peeled, cored, and thinly sliced
  • 1 tsp grated lemon peel
  • 1 tsp lemon juice
  • 1/2 tsp cinnamon
  • 1 1/2 c. part-skim ricotta cheese
  • 8 pkt artificial sweetener
  • 1 x egg white plus
  • 1 whl egg lightly beaten (or possibly 1/4 c. egg substitute)
  • 1 c. low-fat plain yogurt

Method

  • Sprinkle the cereal on the bottom of a deep 9-inch pie pan coated with nonstick vegetable cooking spray.
  • Arrange apples over the cereal and sprinkle with the lemon peel, lemon juice, and cinnamon.
  • Combine ricotta, artificial sweetener, egg, and yogurt, mixing with a spoon till smooth.
  • Pour over the apples.
  • Bake at 350 degrees for 45 min or possibly till apples are tender when pierced with a fork and the top is golden brown.
  • Serve hot or possibly cool.
  • This recipe yields 8 servings.
  • Serving size: 1 slice.
