- 2 1/2 c. pecans, chopped
- 1/2 lb. candied red cherries
- 1 (8 oz.) pkg. dates, chopped
- 5 slices candied pineapple, chopped
- 1 c. self-rising flour
- 1 tsp. baking powder
- 1/8 tsp. salt
- 1 c. sugar
- 1 tsp. vanilla
- 1 tsp. cinnamon
- 4 eggs
Method
- Mix flour, baking powder and salt and sift over fruit and nut mixture; mix well.
- Mix sugar, vanilla and cinnamon, then add eggs, one at a time.
- Mix well after each egg.
- Mix batter with fruit and flour mixture.
- Bake in 300° oven for 1 hour and 45 minutes.
