Ingredients

  • 1/2 c. soft butter
  • 1/4 c. brown sugar
  • 1 c. flour
  • 1/2 c. chopped nuts
  • 1/2 c. coconut
  • 3 eggs
  • 1/2 c. plus 2 Tbsp. white sugar
  • 3 Tbsp. lemon juice
  • 1 c. cream

Method

  • Blend the first 5 ingredients with hands until mixed.
  • Spread in a 9 x 13-inch pan.
  • Place in a 375° oven until golden brown; stir occasionally while browning.
  • Reserve 3/4 cup for topping. Pat remainder into 10-inch pie tin.
  • Cool.
  • Beat egg yolks until light yellow.
  • Gradually add 1/2 cup white sugar; continue beating until thick and light.
  • Add lemon juice; beat.
  • In separate bowl, beat egg whites until stiff, adding remaining white sugar.
  • Whip cream; fold into egg white mixture.
  • Fold in egg yolk mixture and pour into crust.
  • Add topping and freeze.
  • Yields 8 servings.
