Ingredients
- 1/2 c. soft butter
- 1/4 c. brown sugar
- 1 c. flour
- 1/2 c. chopped nuts
- 1/2 c. coconut
- 3 eggs
- 1/2 c. plus 2 Tbsp. white sugar
- 3 Tbsp. lemon juice
- 1 c. cream
Method
- Blend the first 5 ingredients with hands until mixed.
- Spread in a 9 x 13-inch pan.
- Place in a 375° oven until golden brown; stir occasionally while browning.
- Reserve 3/4 cup for topping. Pat remainder into 10-inch pie tin.
- Cool.
- Beat egg yolks until light yellow.
- Gradually add 1/2 cup white sugar; continue beating until thick and light.
- Add lemon juice; beat.
- In separate bowl, beat egg whites until stiff, adding remaining white sugar.
- Whip cream; fold into egg white mixture.
- Fold in egg yolk mixture and pour into crust.
- Add topping and freeze.
- Yields 8 servings.
