Ingredients
- 1 c. butter
- 2 c. sifted powdered sugar
- 3 sq. unsweetened chocolate, melted
- 1/2 tsp. peppermint extract
- 2 tsp. vanilla
- 1 c. pecans, chopped fine
- 5 egg yolks
Method
- Using electric mixer, beat butter and sugar together until light and fluffy.
- Add melted chocolate and continue beating thoroughly.
- Add egg yolks and beat again until fluffy.
- Blend in extracts.
- Sprinkle 1/2 nuts into 18 cupcake liners.
- Spoon mixture into liners.
- Top with remaining nuts.
- Freeze.
- When serving, can be topped with whipped cream.
