Ingredients

  • 1 c. butter
  • 2 c. sifted powdered sugar
  • 3 sq. unsweetened chocolate, melted
  • 1/2 tsp. peppermint extract
  • 2 tsp. vanilla
  • 1 c. pecans, chopped fine
  • 5 egg yolks

Method

  • Using electric mixer, beat butter and sugar together until light and fluffy.
  • Add melted chocolate and continue beating thoroughly.
  • Add egg yolks and beat again until fluffy.
  • Blend in extracts.
  • Sprinkle 1/2 nuts into 18 cupcake liners.
  • Spoon mixture into liners.
  • Top with remaining nuts.
  • Freeze.
  • When serving, can be topped with whipped cream.
