Ingredients
- 1 c. sugar
- 3/4 lb. margarine
- 1 egg
- 1 tsp. vanilla
- 4 c. sifted flour
- 2 1/2 c. coconut or 7 oz.
Method
- Cream sugar with margarine.
- Add egg, vanilla and flour. Last, add coconut.
- Beat on low with mixer, then beat by hand. Save 1 cup batter to crumble on top.
- Spread batter on 11 x 17-inch cookie sheet, then pour pineapple filling over entire batter; crumble remaining batter on top.
- Bake at 350° for 30 to 40 minutes.
