- 1 c. long grain rice
- 1 c. chicken broth
- 1 c. water
- 1 stick butter or margarine, melted
- 1 pt. small curd cottage cheese
- 1 c. diced (1/8-inch pieces) salami
- 1 envelope Knorr-Swiss leek soup mix
- 1 tsp. each: garlic salt, onion salt and freshly ground pepper
- 12 eggs
- 1 (10 oz.) pkg. frozen chopped spinach, thawed and well drained
- 2 Tbsp. butter (to grease baking dish)
- 1/2 c. freshly grated Parmesan or Romano cheese
Method
- Cook rice in the broth and water.
- When cooked, place in a large bowl and add melted butter.
- Mix well and add the cottage cheese, salami, soup mix, salt and pepper.
- Beat 9 eggs; stir in mixture.
- Add the drained spinach and mix well.
