Ingredients

  • 1 c. long grain rice
  • 1 c. chicken broth
  • 1 c. water
  • 1 stick butter or margarine, melted
  • 1 pt. small curd cottage cheese
  • 1 c. diced (1/8-inch pieces) salami
  • 1 envelope Knorr-Swiss leek soup mix
  • 1 tsp. each: garlic salt, onion salt and freshly ground pepper
  • 12 eggs
  • 1 (10 oz.) pkg. frozen chopped spinach, thawed and well drained
  • 2 Tbsp. butter (to grease baking dish)
  • 1/2 c. freshly grated Parmesan or Romano cheese

Method

  • Cook rice in the broth and water.
  • When cooked, place in a large bowl and add melted butter.
  • Mix well and add the cottage cheese, salami, soup mix, salt and pepper.
  • Beat 9 eggs; stir in mixture.
  • Add the drained spinach and mix well.
